And for dessert:
Strawberry-Raspberry
Lemon-Lime bars –
1/4 cup sugar
1/2 cup butter, room temperature
1 1/2 cups all purpose flour
1/4 tsp salt
Filling
1 cup fresh lemon juice ( I used a real lemon and then RealLemon juice to make a cup)
2-3 tsp lemon zest
1 tbsp of RealLime juice
1/2 cup pureed strawberries (about 3/4 cup berries) (I used
what I had on hand which was about 4 small strawberries and half a box of
raspberries)
1 1/4 cups sugar
4 large eggs
1/4 cup all purpose flour
1/2 tsp baking powder
1/4 tsp salt
Preheat oven to 350F. Lightly grease a 9×13-inch baking pan.
While the crust bakes, prepare the filling. In the bowl of a food processor, combine
lemon juice, lemon zest, strawberry (fruit) puree, sugar and eggs and process
until smooth. Add in flour, baking powder and salt, then pulse until smooth.
Gently pour the filling over the hot crust when it has finished
baking. Return pan to oven and bake for 23-26 minutes, until the filling is set
(There will be a light colored “crust” on top from the sugar in the custard –
nothing to worry about).
Sprinkle the bars with some powdered sugar. Cool completely before slicing and use a damp
knife to ensure clean slices. Store bars
in the refrigerator, especially on a hot day.
Makes 24 bars
Today was one of those days where I had to use what we had on
hand because I haven’t made it to the commissary yet and we are low on
groceries! We all know I love coupons and finding great deals, well I had some
cube steak that I had got on sale and I still have quite a bit of marinade and
spice type items stocked up in my stock pile so I decided to search the
Internet for a recipe using the ingredients that I had and I found this : The
Marlboro Sandwich on The Pioneer
Woman’s blog. I have made other things off of her blog and
it has all been fantastic so I knew this would be a winner…and it was!! Cheap,
quick, and easy always works for me!
We had this with some Ore-Ida Zesties....yummo!
February 6, 2012
So the new Crock Pot I had got for Christmas broke last week! I was so mad. I really don't know why but it cracked!
that sucks!!!
Needless to say I am happy to report I am back to crockin' this week because I was able to get a nice new digital one this weekend (thanks babe).
hello lovely I hope you are ready to crock many meals for us!
So onto the goods...and this one is really, really, REALLY good!! My hubby gave it two thumbs up which is pretty hard to get from him. This is definitely a winner. Its something that I threw together after reading a few recipes and coming across some new spices in the store. I love to experiment and sometimes it turns out awful but this time it was amazing!! Ok ok on with it.....
Honey Kalua Pork
What you will need:
- Pork Roast (whatever size fits your family)
- 1/2 c.Honey
- 3 tbsp Soy sauce
- 1 tbsp Hickory Liquid Smoke
- onion powder (a few hearty shakes)
- 4 tbsp McCormick's Grill Mates Smokehouse Maple Seasoning
- half a stick of butter
- salt and pepper to taste
- cooking spray for your crock
- 1/4 cup of cold water
- 2 tbsp of cornstarch
* I have learned when cooking with a slow cooker that sometimes the flavor can be pulled out a little leaving the dish a little bland so its best to use a lot of spice to have a flavorful meal.
Instructions:
Spray your slow cooker with non-stick cooking spray. Place the roast in your slow cooker. In a small bowl, combine honey, soy sauce, liquid smoke, onion powder, McCormick's Smokehouse Maple seasoning, salt and pepper; pour over your pork. Set the half stick of butter on top of the roast. Cover and cook on low for 6-7 hours or High 4 to five hours or until a meat thermometer reads 160°.
Next remove the meat to a plate .Skim fat from cooking juices; transfer to a small saucepan. Bring liquid to a boil. Combine the cornstarch and water in a small bowl until smooth. Gradually stir into pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Take off the heat.
Now put your roast back in your crock and shred it up.
Then pour the honey sauce over the shredded roast and stir it up
There you have it! It really is delicious or as Khylee would say from watching too much Dora delicioso! Its fairly quick and easy and it can feed allot! We had this with white rice and sauteed bell peppers and onions and green beans for the girls. Enjoy!!
I was on a cooking role today so before I got the yummy Honey Kalua Pork on I made doughnuts for breakfast. When I was growing up I spent allot of time at my best friend's house and I remember her mom always making doughnuts out of canned biscuits. I decided to make those today for my family to enjoy.
Dee Dee's Biscuit Doughnuts
Doughnuts Ingredients:
- 1 can of biscuits
- flour (for your cutting surface)
- oil
Flavour ingredients:
Vanilla Glaze
- powdered Sugar
- milk
- vanilla extract
Chocolate Glaze
- powdered sugar
- milk
- cocoa powder or melted chocolate
Cinnomon Sugar
- Sugar
- Cinnomon
- brown paper lunch bag
Directions:
Take the canned biscuites and flaten out on a floured cutting bored. Use something round to cut circules out of the dough...I used a bottle lid .
Next prepare your glazes or the cinnamon and sugar mix. I did some of all three. I do not have exact measurements. I usually put 1 cup of powdered sugar , a cap full of vanilla, and then slowely add milk in little bits at a time as I am mixing until I have the consistancy I am wanting. The mixture should be thin. If you are using the Sugar and Cinnomon add them to the brown bag and shake it up to mix well. You could also do this with powdered sugar.
When you are done with that start droping your doughnut holes in the oil, flipping them as one side finishes. they should be a nice golden brown. Take them out with a slotted spoon and put them on a plate lined with brown paper bags or paper towels.
As you are wating on one batch to be done coat the others in the desired glaze or sugar connimon mix. If doing the cinnomon mix drop them in the papper bag a few at a time and shake it up until they are evenly coated. Continue until all the holes are done. Enjoy!
